Aioli
Simple Aioli. Just spice it up with Chipotle, Paprika, black Truffle, Curry, or any additional flavor you enjoy.
Ingredients:
- 2-3 garlic cloves, peeled
- 1 whole egg plus 1 egg yolk — keep outside at room temperature*
- 1 cup (8 fl. oz./250 ml) extra-virgin olive oil or canola oil**
- Juice from 1/2 lemon
- Kosher salt
- Additional extra-virgin olive oil as needed
Chop the garlic times until minced. Add garlic and a 1 tsp. salt into the hand blender and pulse to combine. Add the whole egg and egg yolk and pulse to combine. Then, with the machine running, slowly drizzle in the oil in a steady stream. Continue to blend until thoroughly combined. Add a squeeze of lemon juice and adjust the seasoning with salt. For a thinner consistency, add 1 to 2 tsp. water.
*Cold egg could affect blending and Aioli might fail.
**I prefer extra virgin olive oil but keep in mind that for a more neutral flavor, Canola might be a better choice.
To spice up the flavor, you can add a small amount of Truffle oil or any other seasoning once the Aioli is made.
