Just Hummus … !

Well, a simple and delicious story is best told with great ingredients and a little time to create this concoction. I hope you enjoy this amazing treat!

Time: 10 minutes

Ingredients:

  • 1 (15.5.oz) can organic chickpeas or 2 cups of cooked chickpeas
  • 1/3 cup of Tahini
  • 1 freshly squeezed lemon juice
  • 1 small clove garlic, coarsely chopped
  • Salt and pepper
  • Olive oil

Instructions:

Add chickpeas to blender and process. It will look somewhat dry. Add the tahini, 1/4 tsp of salt, pinch of pepper, and chopped garlic. Blend for a couple of minutes. Add the lemon juice. Continue blending. Add water from chickpea can (or from boiled chickpeas) to the desired consistency. Please know that the amount of tahini could be change and adjusted to individual taste.

Continue blending for a couple of minutes as desired. Longer blending creates a smother texture.

Another trick for a supper creamy hummus requires removing the skin of the chickpeas. Just submerge the chickpeas in warm water with 2–3 tbsp. of baking soda. This will dislodge the skin which could be rinsed under running water. I do not do this process to skip any potential flavor altering chemical.

Finally, once in a container, cover top with olive oil. You can add other seasonings like smoked paprika, olives, etc.

Ah, one final note. If you enjoy wine, I believe you should pair your food with whatever the heck you feel like drinking, it’s your call (I really mean it). However, this goes really well with a white wine like Chardonnay, dry Riesling, Sauvignon blanc or even Prosecco or Blanc de blanc.
